This dish is kind of a big dill.
The best part about it (besides the taste) is that it can be easy enough for a weeknight or impressive enough for company.
The cooking time is pretty short, so you can have dinner in the table in under 30 minutes!
Ingredients:
For marinate:
2 TBS Dijon mustard
Fresh lemon juice (from one whole lemon)
Bunches of dill
Plenty of pressed garlic (measure with your heart.)
olive oil
salt and pepper
Salmon (4 fillets)
Directions:
Dress salmon with marinade
Top with more dill and slices of lemon
Roast at 450˚F for 20 -25 minutes
Salmon internal temperature should reach 145˚F (remove it from the oven at 140˚F since the temperature will continue to rise as it rests).
Possible pairings:
Asparagus baked with blue cheese and balsamic vinegar.
Side salad with lemon vinaigrette
Truffle mashed potatoes
